No Bake Cookies

Or, melly's comfort cookies as I like to call them. I always make them the week before . . . you know, and they comfort me. Until I eat nearly the whole batch and I get a stomach ache. Comforting? Not so much.

I remember eating these as a kid in elementary school. Somehow going back to one's youth can also be comforting. I knew them as soon as I tasted them once I found the recipe. Those lunch ladies sure know how to do a cookie up right.

I was glad when the pictures didn't turn out looking like a poo poo platter. Good lighting this evening. Make these. You won't regret it. Unless you eat the whole batch. That you will regret. Take it from a girl who knows.

2 cups sugar

½ cup butter

½ cup milk

3 cups oatmeal

½ cup peanut butter

1 teaspoon vanilla

4 tablespoons cocoa

Bring sugar, butter and milk to a boil over medium heat. Boil for exactly one minute, no longer. Remove from heat and add oatmeal, peanut butter, vanilla and cocoa. Mix together and drop by teaspoon onto wax paper to cool. If you can stand to wait that long!

Oooh, I love those cookies! And great picture too -- those would indeed be hard to take and not look "a certain way" LOL!!!

Mmmmm my mom used to make those cookies. They are delish. I made some vegan chocolate chip cookies this weekend for comfort food also. They too are good for giving a tummy ache.

*sigh* posted cookie comment on wrong post. that's what I get for reading a bunch at once when I'm behind.

just for that, the soup looks great and Zuppa Tuscana is one of my favorites at OG so I may have to copy that too

Where I'm from we call them spider cookies, and we don't use peanut butter, and we also add coconut.

Since I am not home I've kept trying to find the recipe for 'spider cookies' to no avail! So glad I found this one.

We called these Mississippi Mud Cookies when I was a kid, and I've eaten a ton of them. They are so good, and should be good for you. After all, they have oats and peanut butter in them.

Just wanted to let you know I am waiting for these to cool and NO, I can't wait! I've already eaten one. These are so good and easy. Peanut butter and chocolate are two of my favorite combos and these cookies totally hit the spot. Great recipe!

My favorite cookies ever! Around here they're called Carolina Delights or just plain old boiled cookies. I haven't made them in so long, but I have all the ingredients on hand. thanks for the reminder.

My grandmother always made these when we were kids and they are very yummy. Now this is my sister's favorite cookie recipe. My husband loves them and I've tried to follow the recipe but mine never turn out as good as my sister's.
